Pura Enchilada takes its name from its specialty:
cooked-to-order enchiladas made with fresh ingredients from authentic recipes.
The restaurant offers 15 different enchiladas, which consist of a
handmade corn tortilla wrapped around a filling and covered with a sauce. Most
customers simply start with the first enchilada on the menu — the Aguascalientence,
which is made with roasted red potatoes mixed with fresh cheese and chopped
onions and topped with sour cream, cabbage and tomato sauce and then work their
way through the remaining 14. Each enchilada is named for the city or region in
Mexico from which it originated.
